Ingredients

  • Fresh cream: 2 cups
  • Whole milk: 1 cup
  • Sugar: 3/4 cup
  • Vanilla extract: 1 tablespoon
  • Egg yolks: 4
  • Salt: 1/4 teaspoon
  • Chocolate chips or fruit (optional): 1 cup

Instructions

  • Prepare the Base:
    • In a saucepan, heat the cream, milk, and half of the sugar over medium heat until it begins to simmer. Do not boil.
  • Whisk Egg Yolks:
    • In a separate bowl, whisk the egg yolks with the remaining sugar until the mixture is pale and thick.
  • Temper the Eggs:
    • Slowly add a ladle of the hot cream mixture into the egg yolk mixture, whisking constantly to prevent the eggs from curdling.
  • Combine Mixtures:
    • Pour the tempered egg mixture back into the saucepan with the remaining cream. Cook over low heat, stirring constantly, until the mixture thickens enough to coat the back of a spoon.
  • Chill the Mixture:
    • Remove from heat and stir in the vanilla extract and salt. Let the mixture cool, then refrigerate for at least 4 hours or overnight.
  • Freeze the Ice Cream:
    • Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions. If using the French Pot method, churn in small batches for the best texture.
  • Add Mix-ins:
    • In the last few minutes of churning, add chocolate chips or fruit, if desired.
  • Harden the Ice Cream:
